Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 medium red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp tahini sauce
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 4 large whole wheat tortillas

Instructions

  1. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, feta cheese, and parsley.
  2. In a separate bowl, whisk together tahini sauce, lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  4. Lay out the tortillas on a flat surface and spoon the chickpea salad mixture onto each one.
  5. Fold in the sides of the tortilla and roll tightly from one end to form wraps.
  6. Slice diagonally or into pinwheels before serving.
