  • 1 lb beef tenderloin (trimmed)
  • 1 sheet puff pastry (thawed)
  • 1 cup mushrooms (finely chopped)
  • 2 tbsp Dijon mustard
  • 1 egg (for egg wash)
  • Salt and pepper to taste
  • 2 tsp olive oil (for sautéing)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface to 1/8 inch thick and cut into squares.
  2. In a skillet, heat olive oil over medium heat. Sauté finely chopped mushrooms for 5-7 minutes until golden brown; season with salt and pepper.
  3. Season beef tenderloin with salt and pepper. Sear in a hot skillet for 3-4 minutes per side until browned.
  4. Spread Dijon mustard on each beef piece, top with sautéed mushrooms, then wrap in puff pastry squares.
  5. Brush each Wellington with egg wash and place seam-side down on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes until golden brown. Let rest for 5 minutes before serving.
