Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat oven to 325°F (163°C) and grease a mini muffin pan or line with paper liners.
  2. In a bowl, mix graham cracker crumbs and melted butter until it resembles wet sand. Press firmly into each muffin cup.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Add vanilla and mix well before folding in the egg gently.

  6. Allow to cool in the pan before transferring to a wire rack. Chill for at least two hours before serving.
