  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 4 large eggs
  • 1 tbsp granulated sugar
  • 1/4 cup cocoa powder
  • 2 tsp instant coffee granules
  • 1 cup heavy cream
  • 2 cups powdered sugar (for filling)
  • 1 cup semi-sweet chocolate chips (for glaze)

Instructions

  1. Preheat oven to 425°F (220°C). In a saucepan, combine water, butter, and sugar over medium heat until melted. Stir in flour until combined; cook until dough pulls away from the sides.
  2. Remove from heat and let cool slightly. Add eggs one at a time, mixing vigorously until smooth and shiny.
  3. Pipe 4-inch lines onto parchment-lined baking sheets and bake for 25-30 minutes until golden brown.
  4. While éclairs cool, whip heavy cream with powdered sugar until soft peaks form. Fold in coffee granules for mocha filling.
  5. Melt chocolate chips over simmering water or in microwave. Dip cooled éclairs in chocolate glaze and place on wire racks.
