  • 1 medium yellow onion, chopped

  • 2 cups low-sodium vegetable broth
  • 1 cup sour cream
  • 8 oz egg noodles (or rice)

  • Fresh parsley, for garnish

Instructions

  1. Clean morel mushrooms under cold water, pat dry, and slice if large.
