  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz full-fat cream cheese, softened
  • 1 cup sour cream
  • 2 Earl Grey tea bags
  • 1 cup fresh mulberries (or raspberries)
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar until blended. Press firmly into the bottom of a springform pan.
  2. Beat softened cream cheese in a separate bowl until smooth. Mix in sour cream. Steep tea bags in half a cup of hot water for five minutes. Remove bags and gradually add brewed tea to the cream cheese mixture.
  3. Gently fold in mulberries. Add eggs one at a time, mixing gently until just combined.
  4. Pour filling over the crust and bake for 45-50 minutes or until slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least four hours or overnight.
