  • 2 cups butternut squash, cubed
  • 1 lb Italian sausage (mild or spicy)
  • 10 fresh sage leaves, chopped
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
  3. In a skillet over medium heat, cook the Italian sausage until browned (about 5-7 minutes). Add minced garlic for the last minute.
  4. In a bowl, mix ricotta cheese with half of the mozzarella, chopped sage, salt, and pepper.
  5. In a greased baking dish, layer roasted squash, sausage mixture, and ricotta blend; repeat layers until all ingredients are used. Top with remaining mozzarella and Parmesan.
  6. Bake for 35-40 minutes until bubbly and golden brown. Let cool slightly before serving.
