Ingredients
- 2 cups butternut squash, cubed
- 1 lb Italian sausage (mild or spicy)
- 10 fresh sage leaves, chopped
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 3 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
- In a skillet over medium heat, cook the Italian sausage until browned (about 5-7 minutes). Add minced garlic for the last minute.
- In a bowl, mix ricotta cheese with half of the mozzarella, chopped sage, salt, and pepper.
- In a greased baking dish, layer roasted squash, sausage mixture, and ricotta blend; repeat layers until all ingredients are used. Top with remaining mozzarella and Parmesan.
