Ingredients

Scale
  • 1 lb ground chicken
  • 1 cup orzo pasta
  • 1/4 cup fresh parsley, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1/2 tsp crushed red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground chicken, garlic powder, onion powder, parsley, salt, and pepper until just combined. Avoid overmixing.
  2. Roll the mixture into 1-inch meatballs and set aside.
  3. Heat olive oil in a large skillet over medium heat. Sear meatballs in batches until browned on all sides (about 5 minutes). Remove from the skillet.
  4. Add orzo and chicken broth to the same skillet; stir well and bring to a boil while scraping any brown bits from searing.
  5. Nestle meatballs back into the skillet with crushed red pepper flakes. Reduce heat to low, cover, and simmer until orzo is tender (10-12 minutes).
  6. Let rest for a few minutes before serving; garnish with extra parsley if desired.
