  • 1 lb Italian sausage (sweet or spicy)
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, chopped
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Slice the sausage into bite-sized pieces. Chop the bell peppers and zucchini into chunks and slice the red onion thinly. Mince the garlic.
  2. In a large skillet over medium heat, drizzle olive oil until shimmering. Add the sausage and cook for 5-7 minutes until golden brown.
  3. Stir in the bell peppers, zucchini, onion, and garlic. Cook for an additional 5-7 minutes until veggies are softened but still crunchy.
  4. Season with Italian seasoning, salt, and pepper; stir well to coat all ingredients.
  5. Remove from heat and let cool slightly before serving.
