  • 1 cup long-grain rice (basmati or jasmine)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp cinnamon
  • 1 tsp paprika
  • 3 cups chicken or vegetable broth
  • 1 cup carrots (diced)
  • 1 cup peas
  • 2 tbsp olive oil
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions and minced garlic until translucent.
  2. Add lamb, season with salt and pepper, and brown evenly.
  3. Stir in the spices: cumin, coriander, cinnamon, and paprika; cook for two minutes until fragrant.
  4. Pour in rice and broth; bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
  5. Fold in carrots and peas; cover again for an additional five minutes until vegetables are tender.
