- 3 medium zucchinis (sliced lengthwise)
- 1 lb ground beef or turkey
- 2 cups sugar-free tomato sauce
- 2 cups fresh spinach
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 2 tsp Italian seasoning
- 2 tbsp coconut oil
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Slice zucchinis into thin strips and lay them on paper towels to absorb moisture.
- In a skillet, heat coconut oil over medium heat. Sauté onions and garlic until translucent, then add ground meat, cooking until browned.
- Stir in tomato sauce, Italian seasoning, and spinach; let simmer for 5 minutes.
- Layer zucchini slices in the baking dish, followed by half the meat sauce. Repeat layers and finish with another layer of zucchini.
- Cover with foil and bake for 25 minutes. Remove foil for the last 5 minutes to melt cheese if desired.
