Description

Paprika chicken meatballs are a flavorful twist on classic comfort food.   • 1 lb boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 tsp paprika (sweet or smoked)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 large egg
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, mince the chicken breasts until finely chopped. Transfer to a bowl.
  3. Add garlic, paprika, breadcrumbs, egg, salt, and pepper; mix until well combined.
  4. Shape the mixture into small meatballs (about 1 inch in diameter) and place them on a lined baking sheet.
  5. Bake for 20-25 minutes until golden brown and cooked through.
  6. For the sauce, whisk together soy sauce, honey, and Dijon mustard in a small bowl.
  7. Drizzle sauce over meatballs before serving.
