  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup creamy peanut butter
  • 1/4 cup jelly or jam (your choice)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the peanut butter until well combined.
  5. Gradually add the dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized portions onto prepared baking sheets. Create an indentation in each cookie’s center and fill with jelly.
  7. Bake for 10-12 minutes or until golden around the edges. Allow to cool slightly before transferring to wire racks.
