Ingredients

  • 8 oz spaghetti or penne pasta
  • 2 cups fresh basil leaves
  • 1/2 cup pine nuts (lightly toasted)
  • 2 cloves garlic
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the pasta in salted water until al dente, reserving 1/2 cup of the cooking water before draining.
  2. Toast pine nuts in a dry skillet over medium heat for about 3-5 minutes until golden.
  3. In a food processor, blend basil, toasted pine nuts, garlic, Parmesan cheese, lemon juice, and olive oil until smooth; add reserved pasta water if needed for consistency.
  4. Return drained pasta to the pot over low heat and mix in the pesto until well-coated.
  5. Season with salt and pepper to taste. Serve immediately with additional Parmesan if desired.
