  • 2 fresh poblano peppers
  • 4 garlic cloves, minced
  • 8 corn or flour tortillas
  • ¼ cup freshly squeezed lime juice (about 2 limes)
  • ½ cup fresh cilantro, chopped
  • ½ cup sour cream
  • Juice of 1 lime mixed into sour cream

Instructions

  1. Preheat grill to medium-high heat (375°F) or broil in the oven.
  2. Season chicken breasts with salt, pepper, and minced garlic; let sit for five minutes.
  3. Grill poblanos until charred (approximately five minutes per side). Cover in a bowl with plastic wrap for ten minutes to steam.
  4. Grill chicken for 6-8 minutes per side until cooked through (internal temperature should reach 165°F); let rest for five minutes before slicing.
  5. Peel skins off poblanos, remove seeds if desired, and slice into strips.
  6. Warm tortillas on a skillet or over low flames. Assemble tacos by adding sliced chicken, poblano strips, lime juice, and the sour cream mixture. Top with cilantro.
