  • 2 cups fresh broccoli florets
  • 1 cup cooked chicken breast (shredded or cubed)
  • 1/2 cup Greek yogurt
  • 2 tbsp lemon juice

  • Salt and pepper to taste
  • 1 cup cherry tomatoes (halved)
  • 1/4 red onion (thinly sliced)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and cool slightly.
  2. Steam the broccoli florets until tender but still bright green.
  3. In a bowl, whisk together Greek yogurt, lemon juice, garlic powder, salt, and pepper.
  4. In a large mixing bowl, combine the cooked pasta, steamed broccoli, chicken, cherry tomatoes, and red onion. Add the dressing and toss until evenly coated.
