- 12 jumbo pasta shells
- 1 cup canned pumpkin puree
- 1 cup ricotta cheese
- 1 cup smoked gouda cheese, shredded (divided)
- 2 cups fresh spinach, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C). Boil salted water and cook pasta shells until al dente. Drain and set aside.
- In a bowl, mix pumpkin puree, ricotta, spinach, Italian seasoning, salt, pepper, and half the gouda until well combined.
- Fill each shell with the pumpkin mixture and place seam-side up in a baking dish coated with marinara sauce.
- Top with remaining marinara sauce, gouda, and Parmesan cheese.
- Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10-15 minutes until bubbly and golden.
- Let cool for 5 minutes before serving.
