- 1 cup tri-color quinoa
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 cup corn (fresh or frozen)
- ½ red onion, finely diced
- ½ cup fresh cilantro, chopped
- Juice of 2 limes
- 3 tbsp extra virgin olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
Instructions
- Rinse the quinoa under cold water. In a medium pot, combine quinoa with 2 cups water and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed. Fluff with a fork and let cool.
- While quinoa cooks, prepare the vegetables: dice the red bell pepper and halve the cherry tomatoes. Rinse and drain the black beans.
- In a large bowl, combine cooled quinoa, black beans, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, and salt. Pour dressing over salad and toss gently to combine.
