  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup ranch dressing
  • 3 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, mix ranch dressing and soy sauce. Pour over chicken in a resealable bag or shallow dish to marinate for at least 30 minutes.
