Instructions
- Bloom gelatin in a small bowl with cold water for about 5 minutes.
- In a saucepan, combine heavy cream, whole milk, sugar, and vanilla over medium heat until steaming (do not boil).
- Remove from heat and stir in bloomed gelatin until fully dissolved.
- Pour into individual cups or molds and refrigerate for at least 4 hours until set.
- For the raspberry layer, cook raspberries, sugar, lemon juice, and a bit of water in another saucepan over medium heat for about 10 minutes until saucy.
- Once panna cotta is set, gently pour raspberry mixture on top and chill for an additional hour before serving.
