  • 2 cups Yukon Gold potatoes, peeled and diced
  • 1 head garlic
  • 1 medium yellow onion, chopped
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until golden.
  2. While the garlic roasts, sauté chopped onions in butter over medium heat until translucent (5-7 minutes).
  3. Add diced potatoes and vegetable broth to the pot; bring to a boil, then reduce heat and simmer until tender (15-20 minutes).
  4. Squeeze roasted garlic cloves into the pot. Blend mixture until smooth using an immersion blender.
  5. Stir in heavy cream or coconut milk, seasoning with salt and pepper as needed; simmer gently before serving.
