  • 4 large red bell peppers
  • 3 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves (optional)

Instructions

  1. Preheat oven to 450°F (232°C). Place whole red bell peppers on a lined baking sheet. Roast for 25-30 minutes until skins blister and blacken.
  2. While the peppers roast, sauté sliced garlic in olive oil over medium heat for about 2 minutes until fragrant.
  3. Once roasted, cover peppers with plastic wrap for 10 minutes. Peel off skins and remove seeds, then chop roughly.
  4. In a blender, combine roasted peppers, sautéed garlic, olive oil, balsamic vinegar, salt, and pepper. Blend until smooth.
  5. Taste and adjust seasoning if needed; blend again briefly if adding more ingredients.
  6. Serve warm or at room temperature; drizzle with olive oil and garnish with fresh basil if desired.
