  • 2 skin-on salmon fillets (6 ounces each)
  • 1 cup green or brown lentils
  • 3 cups water or vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons freshly squeezed lemon juice
  • 3 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water. In a saucepan, combine lentils with water or vegetable broth. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes until tender.
  2. While the lentils cook, whisk together lemon juice, minced garlic, parsley, olive oil, salt, and pepper in a small bowl to create the sauce.
  3. Heat a nonstick skillet over medium-high heat. Season the salmon fillets generously with salt and pepper. Cook skin-side down for about 5 minutes until golden brown; flip and cook an additional 4-5 minutes until cooked through.
  4. Serve the lentils as a base on plates or bowls topped with salmon fillets. Drizzle generously with the lemon herb sauce.
