  • 1/2 cup unsalted butter (room temperature)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup salted caramel sauce (store-bought or homemade)
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, beat together the butter, granulated sugar, and brown sugar until fluffy. Add the egg yolk and vanilla extract, mixing until well combined. Gradually incorporate the flour and cocoa powder until just mixed.
  3. Wrap the dough in plastic wrap and chill for 1 hour.
  4. Roll out half of the chilled dough on a floured surface to about 1/8-inch thickness and cut shapes using cookie cutters.
  5. Place cut-out cookies on baking sheets and bake for 10-12 minutes until firm yet soft to touch. Cool completely on wire racks.
  6. Spread salted caramel sauce on half of the cookies and top with remaining cookies to create sandwiches. Dust with powdered sugar before serving.
