  • 9 no-boil lasagna noodles
  • 1 pound mixed seafood (shrimp, scallops, crabmeat)
  • 1 cup whole milk ricotta cheese
  • 2 cups shredded fresh mozzarella cheese
  • 1 cup grated fresh Parmesan cheese
  • 1/4 cup chopped fresh basil or parsley
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add heavy cream and stir gently.
  3. Once simmering, add mixed seafood and cook for about 4-5 minutes until shrimp is pink and scallops are opaque.
  4. In a bowl, combine ricotta cheese with half the mozzarella, Parmesan, salt, pepper, and herbs.
  5. Spread a thin layer of sauce in a baking dish. Layer with lasagna noodles, half of the cheese mixture, and half of the seafood mixture. Repeat layers.
  6. Top with remaining noodles and cheeses; sprinkle extra herbs on top.
  7. Cover tightly with foil and bake for 25 minutes. Uncover and bake an additional 15-20 minutes until golden brown.
