Firecracker Kabobs are a vibrant and flavorful grilling delight, perfect for summer gatherings. These skewers feature tender marinated chicken thighs paired with colorful vegetables and juicy pineapple, all kissed by the grill’s flames.   • 1 lb boneless skinless chicken thighs
  • 1 cup bell peppers (mixed red and yellow), cut into chunks
  • 1 medium zucchini, sliced into thick rounds
  • 1 cup fresh pineapple chunks
  • 2 tsp garlic powder
  • 3 tbsp chili sauce (adjust to taste)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp fresh lime juice

Instructions

  1. Marinate the chicken: In a bowl, mix soy sauce, honey, garlic powder, chili sauce, and lime juice. Add chicken thighs and marinate for at least 30 minutes or overnight.
  2. Prepare veggies: Chop bell peppers into chunks and slice zucchini thickly. Cut pineapple into bite-sized pieces.
  3. Assemble skewers: Thread marinated chicken pieces onto skewers alternately with vegetables and pineapple.
  4. Preheat grill: Heat grill to medium-high (400°F/200°C). Soak wooden skewers in water for 30 minutes if using.
  5. Grill kabobs: Cook on the grill for about 5-7 minutes per side until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
  6. Serve & enjoy: Remove from skewers if desired; serve with rice or salad.
