- 1 lb boneless skinless chicken thighs
- 1 cup bell peppers (mixed red and yellow), cut into chunks
- 1 medium zucchini, sliced into thick rounds
- 1 cup fresh pineapple chunks
- 2 tsp garlic powder
- 3 tbsp chili sauce (adjust to taste)
- 2 tbsp low-sodium soy sauce
- 2 tbsp honey
- 2 tbsp fresh lime juice
Instructions
- Marinate the chicken: In a bowl, mix soy sauce, honey, garlic powder, chili sauce, and lime juice. Add chicken thighs and marinate for at least 30 minutes or overnight.
- Prepare veggies: Chop bell peppers into chunks and slice zucchini thickly. Cut pineapple into bite-sized pieces.
- Assemble skewers: Thread marinated chicken pieces onto skewers alternately with vegetables and pineapple.
- Preheat grill: Heat grill to medium-high (400°F/200°C). Soak wooden skewers in water for 30 minutes if using.
- Grill kabobs: Cook on the grill for about 5-7 minutes per side until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
