  • 2 medium onions, finely chopped
  • 1-inch piece fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp curry powder
  • 1/2 tsp ground cardamom
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prep your ingredients by chopping onions and grating ginger.
  2. In a skillet over medium heat, sauté onions in oil until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in curry powder and ground cardamom; toast for one minute.
