- 2 cups cherry tomatoes, halved
- 1 medium red onion, sliced
- 1 cup kalamata olives, pitted

- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 2 tsp dried oregano
- 2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Trim excess fat from chicken breasts and place them in the slow cooker. Season generously with salt and pepper.
- Layer chopped cherry tomatoes, sliced red onion, minced garlic, and kalamata olives over the chicken.
- Drizzle olive oil and freshly squeezed lemon juice over all ingredients.
- Sprinkle dried oregano and thyme on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- About 15 minutes before serving, stir in freshly chopped basil.
