  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 medium red onion, sliced
  • 1 cup kalamata olives, pitted
  • 1/4 cup fresh basil, chopped (plus more for garnish)
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from chicken breasts and place them in the slow cooker. Season generously with salt and pepper.
  2. Layer chopped cherry tomatoes, sliced red onion, minced garlic, and kalamata olives over the chicken.
  3. Drizzle olive oil and freshly squeezed lemon juice over all ingredients.
  4. Sprinkle dried oregano and thyme on top.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  6. About 15 minutes before serving, stir in freshly chopped basil.
