  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium red onion, thinly sliced
  • 1 cup corn (fresh or canned)
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Chop the bell peppers and slice the red onion.
