- 1 medium spaghetti squash (about 3 pounds)
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place cut-side down on a parchment-lined baking sheet. Roast for 30-40 minutes until tender.
- While the squash roasts, heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant (about 1 minute). Add heavy cream, salt, and pepper; simmer gently.
- Once cool enough to handle, shred the roasted spaghetti squash into strands using a fork. Mix shredded squash with the creamy mixture, half of the mozzarella and Parmesan cheeses, and fresh herbs in a large bowl.
- Transfer mixture to the baking dish. Top with remaining cheese and panko breadcrumbs mixed with melted butter.
