  • 68 medium fresh apples (mix of Honeycrisp and Granny Smith)
  • 1 cup dark brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • Juice from 1/2 lemon
  • 1 tsp vanilla extract

Instructions

  1. Peel, core, and slice the apples into quarters.
  2. In a large pot, combine sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice; mix well.
  3. Cook over medium heat for about 20 minutes until apples are softened.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Return puree to low heat; stir in vanilla extract and simmer uncovered for 30 minutes until thickened.
