- ¾ cup granulated sugar
- ½ cup brown sugar (light or dark)
- 1 tsp baking soda

- 2 large eggs (room temperature)
- ⅓ cup vegetable oil
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Peel and mash the persimmons until smooth; set aside.
- In a bowl, whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat together eggs and vegetable oil. Fold in the mashed persimmons.
- Combine the wet and dry ingredients gently until just mixed—avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick inserted comes out clean.
- Allow to cool slightly before slicing.
