  • 4 boneless, skinless chicken breasts
  • 2 cups frozen spinach, thawed and drained
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, mix cream cheese, spinach, artichokes, garlic, Parmesan cheese, chicken broth, and lemon juice until smooth.
