Description

Spinach Beef Cannelloni is a comforting Italian dish that combines tender pasta tubes filled with a savory mixture of seasoned ground beef, fresh spinach, and creamy ricotta.   • 9 lasagna noodles
  • 1 lb lean ground beef
  • 4 cups baby spinach
  • 15 oz whole milk ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper.
  3. In a skillet over medium heat, brown the ground beef. Add garlic and sauté until fragrant. Stir in spinach until wilted.
  4. In a bowl, mix ricotta cheese with Italian seasoning. Combine with the beef-spinach mixture.
  5. Spread marinara sauce on the bottom of the baking dish. Fill each noodle with the mixture and roll tightly. Place seam-side down in the dish.
  6. Pour remaining marinara over the cannelloni and sprinkle with Parmesan cheese.
  7. Cover with foil and bake for 25 minutes; uncover and bake an additional 5 minutes until bubbly.
