- 2 cups fresh spinach (60g)
- 1/2 cup crumbled feta cheese (75g)
- 2 large flour tortillas (120g)
- 1 tbsp olive oil (15ml)
- 2 cloves garlic, minced
- Juice of 1/2 lemon
Instructions
- In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
- Add the fresh spinach and cook until wilted.
- Lower the heat and sprinkle crumbled feta over the spinach. Stir gently for another minute.
- Remove from heat, squeeze lemon juice over the mixture, and stir well.
- Lay tortillas flat and spoon the spinach-feta mixture onto each tortilla. Roll tightly to form wraps.
- Optionally, toast wraps in the skillet over low heat for about 2 minutes per side until golden brown.
- Serve warm, cut in half diagonally.
