Description

Ingredients

  • 2 cups fresh spinach (60g)
  • 1/2 cup crumbled feta cheese (75g)
  • 2 large flour tortillas (120g)
  • 1 tbsp olive oil (15ml)
  • 2 cloves garlic, minced
  • Juice of 1/2 lemon

Instructions

  1. In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
  2. Add the fresh spinach and cook until wilted.
  3. Lower the heat and sprinkle crumbled feta over the spinach. Stir gently for another minute.
  4. Remove from heat, squeeze lemon juice over the mixture, and stir well.
  5. Lay tortillas flat and spoon the spinach-feta mixture onto each tortilla. Roll tightly to form wraps.
  6. Optionally, toast wraps in the skillet over low heat for about 2 minutes per side until golden brown.
  7. Serve warm, cut in half diagonally.
