  • 1 lb ground beef or turkey
  • 2 cups fresh spinach, chopped
  • 4 garlic cloves, minced
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 can (15 oz) crushed tomatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Sauté minced garlic in olive oil over medium heat until fragrant. Add chopped spinach and cook until wilted.
  3. In a large bowl, combine ground meat, breadcrumbs, cooked spinach mixture (cooled slightly), Parmesan cheese, salt, and pepper. Mix well without overworking.
  4. Form the mixture into 1-inch meatballs and place them in the prepared baking dish.
  5. Bake for 25 minutes until golden brown and cooked through.
  6. While baking, simmer crushed tomatoes with olive oil on low heat; season with salt and pepper.
  7. Serve meatballs drizzled with sauce.
