  • 1/4 cup raspberry jam
  • 2 cups powdered sugar
  • 1 tsp pure vanilla extract
  • Red gel food coloring (for frosting)

Instructions

  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, cream softened butter until fluffy, then gradually add sugar.
  4. Beat in eggs one by one along with milk and vanilla until smooth.
  5. Fold dry ingredients into wet until just combined.
  6. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Once cooled, use a knife or corer to remove the center of each cupcake and fill with raspberry jam before frosting.
