Description

These Strawberry Crêpes are light, elegant, and filled with sweet macerated strawberries and soft vanilla cream. Ingredients

For the Crêpes

  • 1 cup (125 g) all-purpose flour

  • 2 large eggs

  • 1 ½ cups (360 ml) milk

  • 2 tbsp melted butter

  • 1 tbsp sugar

  • 1 tsp vanilla extract

  • Pinch of salt

For the Strawberry Filling

  • 2 cups (300 g) fresh strawberries, sliced

  • 1–2 tbsp sugar or honey

  • 1 tsp lemon zest (optional)

For the Cream

  • 1 cup (240 ml) whipped cream or mascarpone

  • 1 tbsp powdered sugar

  • ½ tsp vanilla extract

To Serve

  • Powdered sugar
  • Extra strawberries
  • Chocolate drizzle or strawberry sauce (optional)

Instructions

1. Batter: Mix all ingredients, rest 15 min.
2. Cook: Make thin crêpes on both sides.
3. Strawberries: Mix with sugar, let sit.
4. Cream: Mix cream/mascarpone + sugar + vanilla.
5. Assemble: Fill crêpes with cream and strawberries, roll.
6. Serve: Powdered sugar, extra berries, optional sauce.

Notes

  • Resting the batter makes crêpes softer and easier to flip.

  • Adjust thickness by adding 1–2 tbsp milk if needed.
