  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 cup fresh strawberries (chopped)
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix melted butter with granulated and brown sugar until creamy. Add eggs one at a time, mixing well after each addition, then stir in lemon juice and zest.
  4. Gradually combine dry ingredients with wet ingredients until just mixed. Gently fold in chopped strawberries.
  5. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool for 10 minutes before transferring to a wire rack. Cut into squares and serve warm or at room temperature.
