  • 8 oz mascarpone cheese
  • 1/2 cup granulated sugar (adjust to taste)
  • 1 tsp pure vanilla extract
  • 3 large eggs (room temperature)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 cup unsalted butter, melted (plus more for greasing)
  • 1/2 cup heavy cream (cold)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking sheet with parchment paper.
  2. In a bowl, whisk together eggs and granulated sugar until frothy. Add flour, baking powder, and melted butter; mix until smooth.
  3. Pour the batter onto the prepared baking sheet and bake for 12-15 minutes or until lightly golden.
  4. Once baked, cool slightly and then roll the cake using parchment paper. Peel off the original parchment.
  5. Whip mascarpone cheese, sugar, vanilla extract, and heavy cream until fluffy. Spread evenly over the cake layer.
  6. Scatter sliced strawberries on top, then roll tightly from one end using parchment as support. Wrap in plastic wrap and refrigerate for at least two hours.
  7. Dust with powdered sugar before slicing and serving.
