  • 4 medium yellow squashes (about 1 lb)
  • 1 lb lean ground turkey
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (red or yellow)
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the yellow squashes in half lengthwise and scoop out the seeds to create boats.
  3. In a skillet over medium heat, drizzle olive oil and sauté onions and garlic until softened.
  4. Add ground turkey; cook until browned. Stir in bell peppers, cooked rice, Italian seasoning, salt, and pepper until well combined.
  5. Spoon the turkey mixture into each squash half and top with shredded cheese.
  6. Place stuffed squashes on a baking tray lined with parchment paper and bake for 25-30 minutes until tender.
