Ingredients

  • 8 oz rotini pasta
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced bell peppers (any color)
  • ½ cup sour cream
  • 4 oz cream cheese (softened)
  • 1 cup low-sodium chicken broth

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, then drain and set aside.
  2. In a skillet over medium heat, brown the ground beef for about 5-7 minutes until no pink remains.
  3. Stir in diced bell peppers and cook until softened.
  4. Add taco seasoning and half of the chicken broth; stir well to combine.
  5. Reduce heat, mix in softened cream cheese and remaining chicken broth until smooth.
  6. Toss in cooked pasta and cheddar cheese; mix until well combined.
  7. Serve topped with a dollop of sour cream.
