Ingredients
- 1 whole turkey (12–14 pounds)
- 1 cup unsalted butter, softened
- 3 tablespoons fresh rosemary, chopped
- 3 tablespoons fresh thyme, chopped
- 3 tablespoons fresh sage, chopped
- 6 cloves garlic, minced
- Salt and pepper to taste
- 2 cups water (for brining)
- 1/4 cup brown sugar (for brining)
Instructions
- Preheat oven to 325°F (165°C). Rinse the turkey and pat dry.
- In a bowl, mix softened butter with chopped herbs and minced garlic; season with salt and pepper.
- Loosen skin over the turkey breast and spread half of the herb butter under the skin; rub remaining butter all over the outside.
- Combine water and brown sugar in a large container to create brine; submerge turkey for at least 4 hours or overnight.
- Remove turkey from brine, pat dry again, and place on a roasting rack in a pan. Tuck wing tips under the body and season with additional salt and pepper.
- Roast uncovered for about 13 minutes per pound until internal temperature reaches 165°F (75°C); baste with extra herb butter every hour.
