  • 1 whole turkey (1214 pounds)
  • 1 cup unsalted butter, softened
  • 3 tablespoons fresh rosemary, chopped
  • 3 tablespoons fresh thyme, chopped
  • 3 tablespoons fresh sage, chopped
  • 6 cloves garlic, minced
  • Salt and pepper to taste
  • 2 cups water (for brining)
  • 1/4 cup brown sugar (for brining)

Instructions

  1. Preheat oven to 325°F (165°C). Rinse the turkey and pat dry.
  2. In a bowl, mix softened butter with chopped herbs and minced garlic; season with salt and pepper.
  3. Loosen skin over the turkey breast and spread half of the herb butter under the skin; rub remaining butter all over the outside.
  4. Combine water and brown sugar in a large container to create brine; submerge turkey for at least 4 hours or overnight.
  5. Remove turkey from brine, pat dry again, and place on a roasting rack in a pan. Tuck wing tips under the body and season with additional salt and pepper.
  6. Roast uncovered for about 13 minutes per pound until internal temperature reaches 165°F (75°C); baste with extra herb butter every hour.
