- 1/4 cup extra virgin olive oil
- 2 tbsp salt
- 1 tsp black pepper
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- Zest and juice of 1 lemon
- 6 cloves garlic, minced
- 1/2 cup unsalted butter
Instructions
- Preheat the oven to 450°F (232°C) and prepare a large roasting pan.
- Place the turkey breast-side down on a cutting board. Cut along both sides of the backbone using kitchen shears and remove it.
- Flip the turkey over and press down firmly on the breastbone to flatten.
