  • 1 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/2 cup strong brewed coffee (cooled)
  • 1/2 tsp vanilla extract
  • 8 oz mascarpone cheese
  • 1/4 cup milk
  • Cocoa powder (for dusting)

Instructions

  2. In a bowl, whisk together flour, baking powder, and sugar.
  3. In another bowl, cream softened butter until fluffy. Gradually add sugar until light and airy.
  4. Beat in eggs one at a time, then mix in brewed coffee and vanilla extract.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Fill each cupcake liner two-thirds full with batter. Bake for 18-20 minutes until golden brown and a toothpick comes out clean. Cool completely.
  7. To make the frosting, mix mascarpone cheese with milk and sugar until smooth. Frost cooled cupcakes generously and dust with cocoa powder.
