Instructions

- In a bowl, whisk together flour, cocoa powder, baking soda, and espresso powder.
- In another bowl, beat softened butter with granulated and brown sugars until light and fluffy.
- Add eggs one at a time along with vanilla extract; mix until fully combined.
- Gradually mix in dry ingredients until just combined.
- Spoon tablespoon-sized dollops onto prepared baking sheets and bake for 10-12 minutes until puffed but still soft in the middle.
- While cooling, whip heavy cream to soft peaks and gently fold in mascarpone cheese.
- Once cookies are cooled, spread filling between two cookies to assemble.
