  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp espresso powder
  • 1 cup mascarpone cheese
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and espresso powder.
  3. In another bowl, beat softened butter with granulated and brown sugars until light and fluffy.
  4. Add eggs one at a time along with vanilla extract; mix until fully combined.
  5. Gradually mix in dry ingredients until just combined.
  6. Spoon tablespoon-sized dollops onto prepared baking sheets and bake for 10-12 minutes until puffed but still soft in the middle.
  7. While cooling, whip heavy cream to soft peaks and gently fold in mascarpone cheese.
  8. Once cookies are cooled, spread filling between two cookies to assemble.
