  • 4 boneless, skinless chicken breasts (1 lb)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 large carrots, sliced thinly
  • 2 celery stalks, diced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 6 cups low-sodium chicken broth
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic; sauté until fragrant (about 3 minutes).
  2. Stir in sliced carrots and diced celery; cook for about 5 minutes until softened.
  3. Push veggies aside and add chicken breasts; brown each side for about 4 minutes.
  4. Pour in diced tomatoes with juices, chicken broth, dried herbs, salt, and pepper. Bring to a gentle boil then reduce heat to low.
  5. Cover and let simmer for about 20 minutes or until chicken is cooked through.
  6. Remove chicken from the pot and shred using two forks; return shredded chicken to the soup. Stir well before serving.
