  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup long-grain white rice
  • 1 medium cucumber, grated (squeeze out excess moisture)
  • 1 cup plain full-fat Greek yogurt
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp fresh dill (or 1 tbsp dried)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray. Season chicken with salt and pepper.
  2. Cook rice according to package instructions; fluff and set aside.
  3. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper to create the tzatziki sauce.
  4. Layer half the rice in the baking dish. Place seasoned chicken on top and cover with half of the tzatziki sauce.
  5. Top with remaining rice and tzatziki sauce.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until chicken reaches an internal temperature of at least 165°F (74°C).
  7. Serve warm with extra tzatziki drizzled on top.
