- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 cup long-grain white rice
- 1 medium cucumber, grated (squeeze out excess moisture)
- 1 cup plain full-fat Greek yogurt
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp fresh dill (or 1 tbsp dried)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray. Season chicken with salt and pepper.
- Cook rice according to package instructions; fluff and set aside.
- In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper to create the tzatziki sauce.
- Layer half the rice in the baking dish. Place seasoned chicken on top and cover with half of the tzatziki sauce.
- Top with remaining rice and tzatziki sauce.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until chicken reaches an internal temperature of at least 165°F (74°C).
- Serve warm with extra tzatziki drizzled on top.
