Instructions

  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in lemon zest and juice.
  4. Gradually add dry ingredients to the wet mixture until just combined. Gently fold in raspberries.
  5. Pour batter into the prepared loaf pan. Bake for 50-60 minutes until golden brown and a toothpick inserted comes out clean.
  6. Allow to cool slightly before drizzling with raspberry glaze made from powdered sugar and lemon juice.
