  • 1 box red velvet cake mix (15.25 oz)
  • 2 large eggs
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 8 oz cream cheese (full-fat), softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a cupcake pan with paper liners.
  2. In a mixing bowl, combine the cake mix, eggs, water, and oil until smooth.
  3. Pour the batter into prepared liners, filling them two-thirds full. Bake for 18-20 minutes until a toothpick inserted comes out clean. Cool completely.
  4. For the filling, beat cream cheese, powdered sugar, vanilla extract, and cocoa powder until fluffy.
  5. Once cooled, scoop out the center of each cake bite and fill with cream cheese mixture.
  6. Chill in the fridge for at least an hour before serving.
